Enoomah Bore Cabernet Sauvignon 2012
Blackcurrant and star anise spice are lifted by aromas of spearmint with firm fine tannins carrying this wine to a bright sour cherry finish.
The fruit used to make this wine was harvested from Brett Munchenberg’s certified organic vineyard in Loxton. The berries were crushed and ferment on skins for approximately a week, with the cap pumped over once every six hours. The wine was pressed before dryness. Following racking malolactic fermentation was encouraged. This wine was created without adding preservatives, it drinks well now and will also develop in complexity with some bottle aging.
